Coconut Pea Rice

The kids will love this blend of jasmine rice, coconut milk and green peas. The ideal side dish to any weeknight meal!
2 cups jasmine rice, washed 1½ cups unsweetened coconut milk 1½ cups water ½ teaspoon salt 1 cup frozen green peas
1. Combine the jasmine rice, coconut milk, water and salt in a medium sized pot. Bring to a boil, cover and reduce heat to low. Simmer until rice has absorbed all the liquid, about 20 minutes.
2. Stir in the green peas and cook until soft, about 5 minutes. Serve immediately.
