Strawberry Basil Salad

Tomatoes would typically be the main ingredient of this dish, but strawberries are an excellent and delicious substitute.
1 pound strawberries, hulled and halved ¼ cup thinly sliced fresh basil leaves ½ cup small mozzarella balls, halved 1 tablespoon balsamic vinegar 1 teaspoon olive oil ½ teaspoon water ½ teaspoon finely grated fresh ginger ⅛ teaspoon salt ⅛ teaspoon black pepper
1. In a serving bowl, combine the strawberries, basil and mozzarella cheese. 2. In a small bowl, whisk together the balsamic vinegar, olive oil, water, ginger, salt and pepper. 3. Pour the vinaigrette over the strawberries and toss to coat. 4. Cover and let rest at room temperature or in the refrigerator for 30 minutes prior to serving.
