Smoky Mashed Sweet Pota­toes

TO MAKE AHEAD: Peel and cube sweet pota­toes; re­frig­er­ate for up to 2 days.

4 lbs. sweet pota­toes, peeled and

cut into ½-inch pieces

¾ cup non­fat milk

5 Tbsp. un­salted but­ter

5 cloves gar­lic, coarsely chopped 4 sprigs fresh thyme plus 2 tsp.

minced, di­vided

1½ tsp. smoked pa­prika

1 tsp. salt

½ tsp. grated or­ange zest

⅛ tsp. cayenne pep­per

¼ cup chopped scal­lions

1. Com­bine sweet pota­toes, milk, but­ter, gar­lic, and thyme sprigs in a large pot. Cover and cook over low heat, stir­ring oc­ca­sion­ally, un­til the sweet pota­toes are very soft, 30 to 45 min­utes. 2. Let cool slightly. Dis­card the thyme sprigs and trans­fer the sweet potato mix­ture to a food pro­ces­sor. Add minced thyme, pa­prika, salt, zest, and cayenne. Blend un­til smooth. Stir in scal­lions.
