Smoky Mashed Sweet Potatoes

TO MAKE AHEAD: Peel and cube sweet potatoes; refrigerate for up to 2 days.
4 lbs. sweet potatoes, peeled and
cut into ½-inch pieces
¾ cup nonfat milk
5 Tbsp. unsalted butter
5 cloves garlic, coarsely chopped 4 sprigs fresh thyme plus 2 tsp.
1½ tsp. smoked paprika
1 tsp. salt
½ tsp. grated orange zest
⅛ tsp. cayenne pepper
¼ cup chopped scallions
1. Combine sweet potatoes, milk, butter, garlic, and thyme sprigs in a large pot. Cover and cook over low heat, stirring occasionally, until the sweet potatoes are very soft, 30 to 45 minutes. 2. Let cool slightly. Discard the thyme sprigs and transfer the sweet potato mixture to a food processor. Add minced thyme, paprika, salt, zest, and cayenne. Blend until smooth. Stir in scallions.
