There’s a Party in Your Pantry
Whether you need a last-minute app to bring somewhere or just decided to host a spur-of-the-moment soiree at your pad, these tasty tidbits can be put together with ingredients you might already have in your kitchen. Savory Date & Pistachio Bites
Combine 2 cups pitted dates, 1 cup each unsalted shelled pistachios
and golden raisins,
1 tsp. ground fennel
and ¼ tsp. ground pepper in a food processor; process until finely chopped. Form into about 32 balls, using about 1 Tbsp. each.
SERVES 32: 1 ball each
Marinated White Beans
Rinse one 15-oz. can white beans. Combine in a small saucepan with 1 cup extra-virgin olive oil,
3 lemon slices, 2 small dried red chiles, 1 bay leaf and 1 tsp. cracked
black peppercorns. Cook over medium heat until heated through, about 5 minutes. Remove from heat and add a pinch of salt; let stand at room temperature for 20 minutes before serving.
SERVES 16: 2 Tbsp. each
Whisk 3 Tbsp. extra-virgin olive oil,
11/2 tsp. each paprika
and dried oregano
and a pinch of salt
in a large bowl. Add 3 cups (about 4 oz.) whole-grain crackers
and toss to coat. Spread on a rimmed baking sheet. Bake at 300°F for 10 minutes. Cool on the pan for 10 minutes. SERVES 8: 1/4 cup each
Harissa Mackerel & Endive
Drain one 4-oz. can oil-packed mackerel and flake apart. Combine 2 Tbsp. mayonnaise, 2 tsp. each lemon juice and harissa and a pinch of salt in a small bowl. Add the mackerel. Divide among 16 Treviso and/or endive spears and garnish with chives.
SERVES 16: 1 spear each
