Whether you need a last-minute app to bring some­where or just de­cided to host a spur-of-the-mo­ment soiree at your pad, these tasty tid­bits can be put to­gether with in­gre­di­ents you might al­ready have in your kitchen. Sa­vory Date & Pis­ta­chio Bites

Com­bine 2 cups pit­ted dates, 1 cup each un­salted shelled pis­ta­chios

and golden raisins,

1 tsp. ground fen­nel

and ¼ tsp. ground pep­per in a food pro­ces­sor; process un­til finely chopped. Form into about 32 balls, us­ing about 1 Tbsp. each.

SERVES 32: 1 ball each

Mar­i­nated White Beans

Rinse one 15-oz. can white beans. Com­bine in a small saucepan with 1 cup ex­tra-vir­gin olive oil,

3 le­mon slices, 2 small dried red chiles, 1 bay leaf and 1 tsp. cracked

black pep­per­corns. Cook over medium heat un­til heated through, about 5 min­utes. Re­move from heat and add a pinch of salt; let stand at room tem­per­a­ture for 20 min­utes be­fore serv­ing.

SERVES 16: 2 Tbsp. each

Spiced Crack­ers

Whisk 3 Tbsp. ex­tra-vir­gin olive oil,

11/2 tsp. each pa­prika

and dried oregano

and a pinch of salt

in a large bowl. Add 3 cups (about 4 oz.) whole-grain crack­ers

and toss to coat. Spread on a rimmed bak­ing sheet. Bake at 300°F for 10 min­utes. Cool on the pan for 10 min­utes. SERVES 8: 1/4 cup each

Harissa Mack­erel & En­dive

Drain one 4-oz. can oil-packed mack­erel and flake apart. Com­bine 2 Tbsp. may­on­naise, 2 tsp. each le­mon juice and harissa and a pinch of salt in a small bowl. Add the mack­erel. Di­vide among 16 Tre­viso and/or en­dive spears and gar­nish with chives.

SERVES 16: 1 spear each
