We’re al­ways look­ing for ways to eat more veg—be­yond the same cru­dités you’ve been snack­ing on at ev­ery gath­er­ing this sea­son. With all due re­spect to baby car­rots, raw broc and ranch, how about some fresh, new ideas just when you need them—like roasted salt-&-vine­gar turnips or green beans with hard-boiled eggs, fried shal­lots & ba­con. And be­cause we know how much time you’ve got right now (ha!) you’ll find plenty of recipes for meals you can whip up like that, in­clud­ing a pot­sticker & veg­etable soup we can’t stop slurp­ing.

Put your slow cooker to work mak­ing these saucy short ribs while you cross off things on your hol­i­day to-do list. Then mash up some pota­toes when you’re ready to eat—or don’t. It’s plate-lick­ing good as is.
