Sorry, light-meat lovers, chicken thighs are su­per-fla­vor­ful, pack ex­tra nu­tri­ents like iron and zinc, and the dark meat is moist and hard to over­cook. Af­ter trim­ming, 11/4 lbs. of bone­less thighs will give you about four 4-oz. por­tions raw—easy. For bone-in thighs, buy about 11/2 lbs. Af­ter trim­ming, you’ll have four 4-oz. por­tions (plus bones!).
