Steak-and-mushroom Lettuce Leaf Tacos
Makes 4 servings Prep 15 minutes Cook 5 minutes
1 tbsp olive oil
8 oz cremini mushrooms,
8 oz leftover grilled medium-rare flank steak, chopped into small pieces
1 tsp chili powder
1/2 tsp ground cumin
1/2 tsp salt
Juice of 1 medium lime 1 large head green leaf lettuce, leaves separated and cleaned 1/2 cup sour cream
Fresh cilantro leaves Bottled hot sauce (optional)
Cooked rice and red beans, heated
• In a large nonstick skillet, heat oil over medium-high. Add mushrooms and cook 3 minutes. Add steak, chili powder, cumin and salt and cook 2 minutes. Remove from heat and stir in lime juice.
• Let everyone assemble their own tacos using lettuce leaves, seasoned steak, sour cream, cilantro and hot sauce (if using). Serve with rice and beans.
