Arc­tic Char with Cher­moula

Makes 4 serv­ings Prep 10 min­utes Broil 6 min­utes

1/2 cup packed pars­ley leaves 2 tbsp packed cilantro leaves 2 cloves gar­lic

1/3 cup pit­ted Kala­mata olives 1 tbsp fresh lemon juice

1/2 tsp ras el hanout (Moroc­can spice blend)

¼ tsp crushed red pep­per

1/8 tsp cumin

¼ tsp lemon zest

¼ tsp salt

1/3 cup plus 1 tbsp olive oil

1 lb arc­tic char, cut into 4 pieces

• Heat broiler. In a mini chop­per, pulse to roughly chop pars­ley, cilantro and gar­lic. Trans­fer to a small bowl. Pulse olives to chop. Add to the small bowl with next 5 ingredients, 1/8 tsp salt and

1/3 cup oil. Stir.

• Place fish on a foil-lined sheet and sea­son with 1/8 tsp salt. Brush with 1 tbsp oil. Broil 4 inches from heat for 6 min­utes, un­til cooked through. Serve with a spoon­ful of cher­moula on top.
