Sheet Pan Pesto Chicken with Po­lenta

Heat oven to 400°. Ar­range 4 bone-in, skin­less chicken breasts (about 3 lbs) on one side of a rimmed bak­ing sheet. Driz­zle with 1 tbsp veg oil and sprin­kle with 1/4 tsp salt. Roast 20 min. Mean­while, toss 1 lb broc­coli rabe, trimmed, with 2 tbsp veg oil and 1/4 tsp salt. Ar­range on a sec­ond rimmed sheet pan. Trim ends of one 18 oz tube pre­pared po­lenta and slice length­wise into 4 planks. Sprin­kle with 2 tbsp finely grated Parme­san and add black pep­per to taste. Re­move chicken from oven. Spoon 1 tbsp pre­pared pesto over each breast. Add po­lenta to pan. Re­turn chicken to oven along with broc­coli rabe. Roast un­til chicken is cooked through, 20 min more. Serve chicken with po­lenta and broc­coli rabe. Serves 4.
