2016 Vista Luna, from Napa’s Ney­ers Vine­yards, pos­sesses a sub­tle min­eral aroma from the quartz soil the grapes are grown in, com­ple­ment­ing the hearts’ iron meati­ness. For beer, con­sider a Flem­ish red ale; al­most like a malty red wine, this cask-aged ale has the com­plex­ity and hearti­ness—ex­cuse the pun—to deeply en­hance this dish. —J.M.
