2016 Vista Luna, from Napa’s Neyers Vineyards, possesses a subtle mineral aroma from the quartz soil the grapes are grown in, complementing the hearts’ iron meatiness. For beer, consider a Flemish red ale; almost like a malty red wine, this cask-aged ale has the complexity and heartiness—excuse the pun—to deeply enhance this dish. —J.M.
