3 eggs
6 Tbs. sugar substitute, like Monk Fruit in the Raw 5 Tbs. light butter spread or margarine
1⁄2 tsp. vanilla extract
1⁄2 tsp. strawberry extract
1 cup self-rising flour
8 tsp. powdered sugar
1 cup fresh strawberries, quartered
Heat oven to 350°F. Line 16 mini-muffin pan wells. In bowl, whisk first 5 ingredients. Sift in flour; stir to combine. Spoon into liners; bake 15 min. or until done. Let cool. In bowl, mix powdered sugar with a few drops of water; spread frosting on cupcakes. Top with berries.
