Honey-Roasted Salmon with Fresh Pineapple Salsa

A spicy-sweet salsa give these low-calorie fish fillets high-impact flavor, setting the stage for a nutritious and delicious meal the whole family will love
3 cups diced pineapple
1 cup diced onions
1⁄4 cup chopped scallions
3 Tbs. chopped cilantro 1 jalapeño, seeded and minced
2 limes, zested and juiced
Pinch of cayenne pepper (optional) 2 Tbs. extra-virgin olive oil
1⁄2 tsp. honey
1 clove garlic, chopped
6 (6 oz.) salmon fillets
1 Heat oven to 400°F. In bowl, toss first 5 ingredients with 2 Tbs. lime juice, 1 tsp. zest and cayenne, if desired.
