Greek Chicken Tacos

chicken breasts

4 cups vegetable broth 1 pint cherry tomatoes,

quartered

1 cucumber, diced

1 small red onion, diced 11⁄2 Tbs. red wine vinegar 4 gluten-free pitas

Short on time? Use leftover grilled chicken or supermarke­t rotisserie chicken and this hearty meal can be on the table in 5 minutes

In pan over medium heat, simmer chicken in broth 10 to 12 min. or until cooked through. Strain; shred. In bowl, toss next 4 ingredient­s. Season.

In dry skillet over medium–high heat, warm pitas 30 sec. on each side. Spread 2 Tbs. hummus over each pita. Divide chicken, lettuce, tomato mixture, olives and feta among pitas. Fold in half.
