Cashew, Beef & Mushroom Bliss

11⁄4 cups Greek yogurt

3 Tbs. cashew or peanut butter

4 cups cooked gluten-free ramen noodles

11⁄2 cups sliced mushrooms, cooked

1 lb. ground beef, browned

4 eggs, cooked over easy

3⁄4 cup bean sprouts

1⁄2 cup cashews, toasted

1 cup carrots, grated

1 spring onion, cut into rings

In bowl, combine first 2 ingredient­s; set aside. Divide noodles evenly among 4 bowls; top with remaining ingredient­s. Drizzle with cashew-yogurt sauce.
