Rainbow Veggie Contentment

1 red chili pepper, seeded and diced
1⁄3 cup brown sugar
2 limes, juiced
1⁄2 cup olive oil
1 cup quinoa, cooked
1 large sweet potato, cubed and roasted
1 large red bell pepper, diced
1 mango, peeled and sliced
4 cups shredded cabbage
1 (16 oz.) can kidney beans, drained and washed
In blender, puree first 4 ingredients. Divide quinoa evenly among 4 bowls; layer remaining ingredients over top, dividing evenly. Drizzle with chili-lime sauce.
