2 cloves garlic, diced

5 Tbs. olive oil

11⁄4 cups brown rice couscous, cooked

2 cups chopped, cooked chicken breasts

11⁄2 cups packed baby spinach

2 zucchini, grated

2 cups cherry tomatoes, halved

1 cup feta cheese, crumbled

1⁄2 cup chopped walnuts

1⁄2 cup pitted kalamata olives, chopped

In blender, puree first 3 ingredient­s. Divide couscous and remaining ingredient­s among 4 bowls; top with sauce.
