Charred Potato Wedges with Lemon-Herb Butter

To get a head start on prep, microwave potatoes before guests arrive and chill, then dress and throw on the grill for a fast and easy finish

2 lbs. medium red potatoes

6 Tbs. softened butter

1 Tbs. minced fresh thyme

1 Tbs. minced fresh rosemary

1 Tbs. minced fresh chives

2 tsp. fresh lemon juice

1 Heat grill. Microwave potatoes 10 min., turning occasional­ly.

2 In bowl, combine butter, thyme, rosemary, chives and lemon juice. Season to taste with salt and pepper.

Slice potatoes 1⁄4" thick. Brush both sides with mixture. Grill 5 to 6 min. or until golden, turning once.
