Corn, Black Bean & Avocado Salad

Grilling the corn gives this salad a delicious smoky flavor that’s perfectly balanced by creamy avocado

4 Tbs. prepared citrus dressing

1 lime, zested and juiced

1 clove garlic, minced

1⁄2 tsp. ground cumin

Pinch of ground cayenne pepper

3 ears fresh corn

1 (15.5 oz.) can black beans, drained

2 avocados, peeled, pitted and diced

1 sweet red bell pepper, diced

1⁄4 cup minced red onions

1⁄2 cup minced fresh cilantro

2 heads Boston lettuce

1 Heat grill. In large bowl, combine dressing, 1 Tbs. lime juice, 1 tsp. lime zest, garlic, cumin and cayenne pepper.

2 Coat corn with cooking spray; season with salt and pepper. Grill 1 min. per side, or until lightly charred. Let cool. Cut corn off cobs.

3 Toss corn, beans, avocados, peppers, onions and cilantro with dressing. Season with salt and pepper. Serve in lettuce-lined bowl, if desired.
