Smoky-Sweet St. Louis Style BBQ Ribs

2 (5 lb.) racks St. Louis-style ribs

6 Tbs. Dijon mustard

2 (2.25 oz.) pkgs. BBQ rub, like McCormick Memphis Pit

2 cups prepared barbecue sauce, like Sweet Baby Ray’s

1⁄4 cup rice vinegar

1 Remove tough membrane on underside of ribs. Place ribs on double sheets of heavy-duty foil. Brush both sides with mustard. Season with BBQ rub. Wrap tightly. (Can be done the night before.) Place on baking sheets in oven. Heat oven to 300°F. Bake 4 hrs. (Can be done several hours ahead.)

2 Meanwhile, in bowl, combine barbecue sauce and vinegar; whisk until well-combined. Transfer half of mixture to second bowl. Unwrap ribs; drain juices and discard. Cut ribs into portions.

3 Heat grill to medium-high for direct cooking. Brush ribs with half of barbecue sauce. Grill 10 min. or until lightly caramelize­d and browned, turning once. Let sit 15 min.
