Crêpes with Vanilla-Honey Yogurt

2 eggs
11⁄2 cups milk
1 cup all-purpose flour
1⁄4 cup granulated sugar
1 stick butter, melted and divided
1 cup plain yogurt
1 vanilla bean, seeds scraped out
1⁄4 cup honey
In blender, puree first 4 ingredients and 6 Tbs. butter. Chill 30 min. In bowl, whisk yogurt, vanilla seeds and honey. Heat 1 tsp. butter in nonstick skillet over medium heat; spoon 1⁄4 cup batter into pan. Cook 3 min.; roll up. Repeat. Serve with yogurt and fresh berries, if desired.
