Gobblin’ Good Nutter Butter Cupcakes
1 (15 oz.) box chocolate
fudge cake mix
2 cups Greek yogurt,
divided
1 stick butter
1⁄2 cup honey
1 Tbs. vanilla extract
3⁄4 cup cocoa powder 4 oz. dark chocolate,
melted
24 Nutter Butter cookies 48 candy eyes
24 orange M&M’s
3 sticks red licorice,
cut into 1⁄2" pieces 2 cups candy corn
1 Heat oven to 375°F. Prepare chocolate cake mix as package directs, replacing oil called for with 1 cup Greek yogurt. Divide batter evenly among 24 lined cupcake wells. Bake 15 min. or until toothpick inserted in center comes out clean.
2 Using electric mixer on medium speed, beat butter with 1 cup Greek yogurt, honey and vanilla extract 1 min. or until incorporated. With mixer running, slowly sift in cocoa powder. Add melted chocolate; beat on high about 2 min., until smooth. Refrigerate 30 min. or until firm. Spread cupcake tops with frosting, reserving 2 Tbs. frosting.
3 Using reserved frosting as glue, stick two candy eyes onto each Nutter Butter cookie. Stick on an M&M for the nose and a piece of licorice for the wattle. Stick a Nutter Butter into each cupcake. Insert 6 to 8 pieces of candy corn behind the Nutter Butter to create the turkey feathers.
