Sweet & Sour Meatballs

1 onion, diced

4 cloves garlic

1⁄4 cup olive oil, divided

2 lbs. ground beef 1⁄4 cup minced fresh parsley

1 cup no-sugar-added

apricot preserves

1⁄2 cup ketchup

1⁄4 cup rice vinegar 1 tsp. red chili flakes To transform these delectable party bites into a hearty and healthy dinner, serve them over a bed of cooked basmati white rice

In pan over medium-high heat, cook onions and garlic in 2 Tbs. oil 5 min. Transfer to bowl; mix in ground beef, parsley and salt and pepper to taste.

In pan over medium-high heat, brown meatballs in remaining oil on all sides. Transfer to slow cooker. Add remaining ingredient­s to slow cooker; stir well. Cover; cook on high 3 to 4 hrs.
