Thyme-Kissed French Onion Soup

4 lbs. onions, thinly sliced

1⁄2 stick butter, melted

2 qts. low-sodium beef stock 2 Tbs. minced fresh thyme 2 Tbs. red wine vinegar 4 slices French bread

2 Tbs. olive oil In slow cooker, combine sliced onions, butter and 1⁄2 tsp. salt; toss well to coat. Cook on high 8 to 10 hrs. or until fragrant and caramelize­d. Add beef stock, fresh thyme, red wine vinegar and salt and pepper to taste; cook on high 3 hrs. more. Heat broiler. Brush both sides of bread sliced with olive oil; broil 1 min. or until toasted, turning once. Serve soup with toasts. Garnish with fresh minced parsley, if desired.
