Chicken Lettuce Wraps

2 lbs. boneless skinless chicken breasts, cut into chunks 1⁄2 cup coconut flour 1 tsp. garlic powder 1 tsp. onion powder 1⁄4 cup canola oil 1⁄4 cup coconut aminos 1⁄2 cup coconut milk 1⁄4 cup brown sugar 2 limes, zested and juiced 12 leaves butter lettuce Seasoned coconut flour creates a light, crunchy breading that’s deliciousl­y glutenfree, but all-purpose flour can be used too

In bowl, toss chicken with next 3 ingredient­s; season with salt and pepper. In skillet over medium-high heat, brown chicken in oil. Transfer to slow cooker.

Add aminos, coconut milk, brown sugar, 2 Tbs. lime juice and 1 tsp. lime zest to slow cooker; stir well. Cover; cook on low 5 to 6 hrs. Serve in lettuce leaves. Garnish as desired.
