Spicy Turkey Zucchini Boats

4 large zucchini, 2 onions, 4 stalks celery, 2 carrots, 1 Tbs. olive oil

1 lb. lean ground turkey 2 tsp. chili powder 2 Tbs. tomato paste 1 (14 oz.) can diced

tomatoes

Heat oven to 375°F. With spoon or melon baller, hollow out zucchini halves, reserving insides. In pot, cook onions, celery and carrots in oil 5 min.

Increase heat to high. Add turkey; cook 3 min. Add chili powder, tomato paste, diced tomatoes and reserved zucchini; cook 5 min. or until liquid mostly evaporates. Stir in cilantro. Spoon mixture into zucchini halves. Bake 45 min. or until tender.
