Mushroom & Beef Empanadas

2 onions, chopped
1 Tbs. olive oil
1 lb. cremini mushrooms, chopped ground beef
chili powder
(14 oz.) can diced tomatoes cup chopped fresh cilantro
(13.8 oz.) can refrigerated pizza dough Ideal for busy weeknights or a fun party starter, these crowd-pleasers can be prepped up to 2 days in advance, then baked as needed
Heat oven to 350°F. In pan over medium heat, cook onions in oil 2 min. Add mushrooms; cook 5 min. Add beef; cook 5 min., stirring often. Add chili powder and tomatoes; cook 10 min. Stir in cilantro.
Divide dough into 8 pieces; roll each into 6" circle. Spoon beef mixture in centers. Fold over; press edges to seal. Arrange on lined baking sheet; bake 10 min.
