Bobby’s key to cheesecake with 86% less saturated fat

“This cheesecake is every bit as rich as New York–style cheesecake but has virtually none of the fat and a tenth of the calories,” notes Bobby Flay in his new book, Fit. To make: In a bowl, whisk 1 (7 oz.) container of 2% Greek yogurt, 1 Tbs. of sugar, 1 tsp. of lemon zest and 1 tsp. of vanilla extract. Scrape into a mesh strainer lined with cheeseclot­h; place over a bowl and chill overnight. Serve with crushed graham crackers and berries.
