Thai researcher­s have uncovered a savvy way to make white rice more waistline-friendly: For every 1⁄2 cup of dry rice, add 1 tsp. of coconut oil to the cooking water, then chill cooked rice overnight before using. This process causes the starches in the grain to be converted into indigestib­le resistant starch, resulting in rice with 50 percent fewer carbs.
