Thai researchers have uncovered a savvy way to make white rice more waistline-friendly: For every 1⁄2 cup of dry rice, add 1 tsp. of coconut oil to the cooking water, then chill cooked rice overnight before using. This process causes the starches in the grain to be converted into indigestible resistant starch, resulting in rice with 50 percent fewer carbs.
