Healthy pumpkin-patch muffins
These monstrously cute treats are packed with filling fiber and energizing protein to keep your gang fueled through a whole night of Halloween fun
Gobblin’ Good Pumpkin Patch Muffins
1⁄2 stick butter, melted 1 cup sugar
1⁄3 cup, plus 2 Tbs. pumpkin puree, divided
1 egg
1⁄2 cup milk
2 tsp. vanilla extract,
divided
21⁄2 cups white
whole-wheat flour 1 tsp. cinnamon Orange food coloring 3⁄4 cup Greek yogurt 1⁄4 cup maple syrup 6 mini Tootsie Rolls 2 oz. marzipan
Green food coloring 12 yogurt-covered
raisins
Round white and black
sprinkles
6 milk chocolate disks 6 white chocolate disks
1 Heat oven to 350°F. With mixer on medium speed, beat butter, sugar, 1⁄3 cup pumpkin and egg 1 min. Beat in milk and 1 tsp. vanilla; beat in flour and cinnamon. Tint orange. Divide among 12 lined muffin wells. Bake 25 min.
2 With mixer on medium speed, beat yogurt, syrup and remaining pumpkin and vanilla. Tint orange. Spread 6 cupcakes with frosting. Sandwich with remaining cupcakes.
Use fork to create lines on each Tootsie Roll; stick in cupcake centers for stems. Tint marzipan green; roll out to 1⁄8" thickness. Cut out 12 leaves; draw veins and arrange around stems. Press raisins into frosting for teeth. With frosting, adhere round sprinkles to chocolate disks for eyes; adhere eyes to cupcakes.
