The su­per­food soup that keeps Nancy SLIM AND EN­ER­GIZED

“When you’re a work­ing mom, it’s hard to stick with a healthy eat­ing rou­tine,” ad­mits Nancy. But over the years, she’s found an easy way to make sure she’s getting all the slim­ming nu­tri­ents she needs. “I make a big pot of this re­ally de­li­cious soup. I throw in every veg­etable I might not be eat­ing, and it’s very filling,” says Nancy. “I’ll sauté chopped-up zucchini, sum­mer squash, Brus­sels sprouts, broc­coli, cel­ery and any other kind of veg­etable you can think of with olive oil, gar­lic and onion un­til soft­ened, then I add a lit­tle bit of low­sodium chicken broth and purée it in the blender un­til smooth. It comes out fluffy and frothy, and it tastes like it has cream in it, but it’s just lots of veg­eta­bles. I’ll have one cup and I’m full, but I’ll have got­ten so many nu­tri­ents and lots of fiber to keep me go­ing.”
