Frosty the Snow­man Muffins

11⁄2 cups flour

2 tsp. bak­ing pow­der 1⁄2 tsp. bak­ing soda 1⁄2 tsp. nut­meg

1 stick but­ter,

at room temp.

1 cup brown su­gar 3 ripe ba­nanas, mashed 2 eggs

1⁄2 cup milk

1 cup non­fat plain

Greek yo­gurt

1⁄4 cup con­fec­tion­ers’

su­gar 1 tsp. vanilla ex­tract 1⁄4 cup dark choco­late,

melted Orange food col­or­ing 1 (1 oz.) pouch blue

dec­o­rat­ing ic­ing Snowflake sprin­kles

1 Heat oven to 325°F. In bowl, mix flour, bak­ing pow­der, bak­ing soda, nut­meg and a pinch of salt. With elec­tric mixer on medium speed, beat but­ter and brown su­gar 2 min. or un­til fluffy. Re­duce speed to low and beat in ba­nanas, then eggs one at a time. Al­ter­nately beat in flour mix­ture and milk un­til well in­cor­po­rated.

2 Di­vide bat­ter evenly among 12 lined cup­cake wells. Bake 30–35 min. or un­til tooth­pick in­serted in cen­ter comes out clean. Let cup­cakes cool on rack.

Mean­while, in bowl, whisk to­gether yo­gurt, con­fec­tion­ers’ su­gar and vanilla. Spread on muffins, re­serv­ing 1 Tbs. Put dark choco­late in plas­tic bag; snip end. Pipe on eyes and mouths. Tint re­served ic­ing orange; use tooth­pick to dot on car­rot noses. Draw on hats with blue dec­o­rat­ing ic­ing. Add snowflake sprin­kles.
