Frosty the Snowman muffins
Packed with mood-boosting probiotics and energizing potassium, these muffins are perfect for refueling little ones after a day of winter fun
Frosty the Snowman Muffins
11⁄2 cups flour
2 tsp. baking powder 1⁄2 tsp. baking soda 1⁄2 tsp. nutmeg
1 stick butter,
at room temp.
1 cup brown sugar 3 ripe bananas, mashed 2 eggs
1⁄2 cup milk
1 cup nonfat plain
1⁄4 cup confectioners’
sugar 1 tsp. vanilla extract 1⁄4 cup dark chocolate,
melted Orange food coloring 1 (1 oz.) pouch blue
decorating icing Snowflake sprinkles
1 Heat oven to 325°F. In bowl, mix flour, baking powder, baking soda, nutmeg and a pinch of salt. With electric mixer on medium speed, beat butter and brown sugar 2 min. or until fluffy. Reduce speed to low and beat in bananas, then eggs one at a time. Alternately beat in flour mixture and milk until well incorporated.
2 Divide batter evenly among 12 lined cupcake wells. Bake 30–35 min. or until toothpick inserted in center comes out clean. Let cupcakes cool on rack.
Meanwhile, in bowl, whisk together yogurt, confectioners’ sugar and vanilla. Spread on muffins, reserving 1 Tbs. Put dark chocolate in plastic bag; snip end. Pipe on eyes and mouths. Tint reserved icing orange; use toothpick to dot on carrot noses. Draw on hats with blue decorating icing. Add snowflake sprinkles.
