Healthy shortcut side
For a zesty “rice” pilaf that’s low in carbs and big on flavor, we start with 1 (12 oz.) package of frozen riced cauliflower and sweet potato, like Cascadian Farms, cooked according to package directions. Then stir in 1⁄4 cup chopped fresh parsley, the zest and juice of 1 lemon, 2 tsp. olive oil and 2 tsp. capers.
