Chicken Tortilla Soup

1 lb. boneless skinless chicken thighs

1 (1 qt.) container chicken broth 1 (14.5 oz.) can diced tomatoes

2 peppers, chopped

1 large onion, finely

chopped

2 Tbs. chili powder 2 cloves garlic, minced 2 tsp. ground cumin

In 5- to 7-qt. slow cooker, combine all ingredient­s. Cover; cook on low 7−8 hrs. until chicken is cooked through. Remove chicken; shred and return to soup. Season with salt and pepper. Serve topped with cheese, avocado and cilantro with tortillas on the side.
