Egg-frittata muffins Whisk 8 eggs; stir in 2 cups broccoli slaw, 1⁄2 cup chopped bell peppers and 1⁄2 cup walnuts. Bake at 350°F for 20 minutes in muffin tin.

dinner

Salmon with sautéed greens Bake 2 (6 oz.) salmon fillets at 375°F for 10 minutes. Serve on greens sautéed in coconut oil with garlic. Top with crushed macadamia nuts.
