Avocado Oven Fries

1⁄4 cup all-purpose flour

1⁄4 tsp. cayenne pepper

2⁄3 cup seasoned whole-wheat breadcrumb­s

2 Tbs. chopped fresh parsley

1 tsp. finely grated lemon zest

2 firm but ripe avocados, pitted, peeled and each cut into 8 wedges

2 eggs, beaten

Heat oven to 425°F. Place rack on rimmed baking sheet; coat with cooking spray. Mix flour and cayenne. In separate bowl, mix breadcrumb­s, parsley and lemon zest. Coat avocado with flour, then egg and breadcrumb­s. Place on rack; coat with spray. Bake until crisp, 8–10 min.
