Keep a pastry crust crisp

Nothing beats a juicy pie filling, yet all that syrupy goodness can make a bottom crust soggy. To keep it crisp, sprinkle with 3 to 4 Tbs. of crushed cookies, such as Lorna Doone, just before filling it. The crumbs will help absorb excess liquid, plus add an extra layer of flavor.
