Grilled Stuffed Avocados

1⁄4 cup mayonnaise

1 Tbs. lemon juice

1 small clove garlic, minced

2 tsp. olive oil

1⁄2 cup rinsed, drained canned chickpeas

1⁄2 tsp. smoked paprika

1⁄2 cup grape tomatoes, quartered

1⁄2 mini cucumber, diced (1⁄2 cup)

1 Tbs. chopped fresh mint

2 firm but ripe avocados, halved, pitted and grilled

Mix mayonnaise, lemon juice and garlic. In skillet, heat oil over medium-high heat. Add chickpeas, paprika and 1⁄8 tsp. salt; cook, stirring, until crisp, 5–7 min.
