Chocolate muffins made healthy

1 cup grated zucchini (from 6 oz. zucchini) 3⁄4 cup all-purpose flour 1⁄2 cup whole-wheat flour 1⁄2 cup unsweetene­d cocoa

powder 11⁄4 tsp. baking powder 1⁄4 tsp. baking soda

1⁄2 tsp. salt

2 eggs 1⁄2 cup milk

1⁄4 cup oil

1⁄3 cup M&M’s candies

1 Heat oven to 350°F. Line 12 muffin cups with cupcake liners. Squeeze zucchini dry between paper towels and reserve.

2 In bowl, combine flours, cocoa, baking powder, baking soda and salt. In separate bowl, combine eggs, milk and oil; stir in zucchini. Stir egg mixture into flour mixture. Divide evenly among muffin cups; top with M&M’s.

3 Bake muffins until toothpick inserted into centers comes out dry, about 20 min. Let cool 5 min. Transfer from pan to racks and let cool completely.
