Apple-icious comfort

22⁄3 cups Bisquick baking mix

2⁄3 cup milk

2 eggs

2 tsp. vanilla extract

2 Tbs. oil

2 apples, peeled, cored and cut crosswise

into scant 1⁄4"-thick slices

Heat oven to lowest setting. Whisk first 4 ingredient­s. In nonstick skillet, heat 1 Tbs. oil over medium-low heat. In batches, spread batter over all sides of apple slices. Cook, turning, until golden, 2–3 min. per side. Keep warm in oven while cooking remaining apple slices in oil.
