Roast Cabbage with Bacon and Caraway

Apple cider adds sweetness to roasted cabbage that’s ready for the oven in just 15 minutes
3 lbs. cabbage, cored, cut into
11⁄2" wedges
6 strips bacon
3⁄4 cup apple cider
1 Tbs. red wine vinegar
1⁄2 tsp. caraway seeds, crushed 1⁄2 tsp. salt
1⁄4 tsp. pepper
1 Heat oven to 400°F. Arrange cabbage in roasting pan. In skillet, cook bacon over medium heat until crisp, 8 min. With slotted spoon, transfer to paper towels. Stir cider, vinegar, caraway, salt and pepper into hot drippings; over high heat, bring to a boil.
2 Pour cider mixture over cabbage; cover with foil. Roast until almost tender, 20–30 min; uncover. Turn wedges over; roast until tender, 10 min. Serve pan juices over cabbage.
