Apple Crumb Parfaits

2 soft oatmeal cookies, finely crumbled 2 tsp. butter, melted

2 apples, peeled, cored and cut into 1⁄2" pieces 1⁄3 cup dried currants 1⁄4 cup maple syrup

1 tsp. ground cinnamon

1⁄4 cup toasted slivered almonds

1 cup vanilla Greek yogurt

Mix cookies and butter until crumbly. In large nonstick skillet, mix next 4 ingredient­s and 3⁄4 cup water; over high heat, bring to boil. Cover; over medium-low, cook until apples are tender, 8–10 min. Uncover; cook until thickened, 5 min. Cool. Stir in almonds. Serve over yogurt topped with crumbs and, if desired, whipped cream.
