Apple-Cherry Mini Pies

2 apples, peeled, cored and chopped 11⁄2 cups apple juice
1⁄2 cup dried cherries
1⁄4 cup sugar
2 tsp. grated peeled fresh ginger 2 tsp. cornstarch
4 (3"–4") baked puff pastry rounds
In large nonstick skillet, mix first 6 ingredients and a pinch of salt; over high heat, bring to a boil. Cover; over medium-low heat, cook until apples are tender and mixture is thickened, 5–7 min. Cool slightly. Divide mixture among 4 (6 oz.) bowls or cups. Top with pastry. If desired, sprinkle with confectioners’ sugar.
