Honey-Kissed Rainbow Vegetable Medley

Roasting veggies on a preheated pan ensures their natural sugars brown for sweet-savory goodness 2 cups broccoli florets

2 carrots, diagonally cut into

1"-11⁄2" pieces

1 red onion, cut through core into

1⁄2" wedges

1 red pepper, seeded, cut into

1⁄2"-wide strips

3 Tbs. olive oil

2 Tbs. honey

1 Tbs. chopped fresh parsley +

additional (optional) 1 Place rimmed baking sheet on center rack in oven; heat to 400°F. In large bowl, toss broccoli, carrots, onion, pepper, oil, 1⁄2 tsp. salt and

1⁄4 tsp. pepper until evenly coated. 2 Carefully transfer vegetable mixture to hot baking sheet; spread out in single layer. Roast vegetables until just starting to brown, about 20 min.; drizzle with honey and sprinkle with 1 Tbs. chopped parsley. Stir to coat; spread out in single layer. Roast stirring once, until vegetables are golden brown and glazed, about 15 min. If desired, sprinkle with parsley.
