Garlic-Balsamic Sweet Potato Fries

These oven-baked wedges have all the flavor but just a fraction of the fat of the deep-fried version

4 large sweet potatoes (about 2

lbs.), peeled, cut into 1"-thick fries 3 Tbs. olive oil

1 tsp. garlic powder

1⁄2 tsp. ground cumin

1⁄2 tsp. paprika

1 Tbs. white balsamic vinegar

1 Heat oven to 400°F. Coat large rimmed baking sheet with cooking spray. In large bowl, toss potatoes with oil, garlic powder, cumin, paprika, 1⁄2 tsp. salt and 1⁄4 tsp. pepper.

2 Transfer potatoes to baking sheet; spread out in single layer. Bake, turning occasional­ly, until tender and golden brown, about 30 min. Transfer to napkin-lined serving bowl; drizzle with balsamic vinegar.
