Cheddar-y Potato Bake

This comfort-food casserole is extra satisfying made with good-for-you creamy Greek yogurt and garlic
3 lbs. red potatoes, chopped
2 cloves garlic, peeled, smashed 1⁄2 cup milk
1⁄4 cup butter
1⁄2 cup plain Greek yogurt
1 cup shredded extra-sharp
Cheddar cheese, 4 oz.
2 Tbs. chopped fresh parsley +
additional
1 tsp. chopped fresh thyme
1 In large pot, cook potatoes and garlic in salted boiling water until tender, 15–20 min; drain well. Meanwhile, heat oven to 425°F. Coat 11⁄2-qt. baking dish with cooking spray.
2 Return potato mixture to same pot. In microwave-safe measuring cup, microwave milk and butter in 15-sec. intervals until butter is melted. Add to potatoes with yogurt, 1⁄2 tsp. salt and 1⁄4 tsp. pepper; mash. Stir in 1⁄2 cup cheese, 2 Tbs. parsley and thyme.
3 Transfer to baking dish. Sprinkle with remaining cheese. Bake until hot and cheese is melted, 20 min. Let stand 5–10 min. before serving. If desired, sprinkle with parsley.
