Surprise-Inside Chocolate Cupcakes

Everyone’s lucky when they find the sweet treasure hidden inside

1⁄3 cup unsweetened cocoa powder

11⁄4 cups butter, at room temp.

21⁄2 cups confectioners’ sugar 1 tsp. vanilla extract

3⁄4 cup semisweet chocolate

chips, melted

Green concentrated food coloring 12 chocolate cupcakes

3⁄4 cup green M&M’s

3 (1⁄ oz.) chocolate squares,

2 each cut into 4 pieces

1 Stir cocoa into 1⁄3 cup boiling water. On medium speed, beat butter until fluffy, 2 min. On low speed, gradually beat in sugar, then vanilla. On mediumhigh speed, beat until fluffy, 2 min.

2 Transfer half of frosting to separate bowl. On medium speed, beat chocolate chips and cocoa mixture into one bowl of frosting. Tint remaining white frosting green with food coloring. Fit medium star tip into pastry bag. Place bag in glass; fold top of bag over glass. Transfer frostings to separate food storage bags. Snip 1⁄2" from one corner of each bag; place inside pastry bag. Cut 11⁄2" wide, 11⁄4" deep cylinder from top of each cupcake; remove cylinder. Trim and discard bottom half from each cylinder; reserve tops. Fill each cupcake with 1 Tbs. M&M’s. Press reserved cake cylinder over candies. Pipe frosting over cupcakes. Garnish with chocolate squares.
