Mustard and apple cider vinegar add a special kick to this tasty side

1 head cabbage, 2 lbs., trimmed,

cut into 2"-wide slices (8 cups)

4 carrots, diagonally cut into

1⁄2"-thick slices

2 Tbs. butter

1 onion, chopped

1⁄4 cup packed light brown sugar 2 Tbs. apple cider vinegar

2 Tbs. spicy brown mustard

1⁄2 tsp. caraway seeds

In pot, combine cabbage and carrots. Fill with water; cover. Over high heat, bring to a boil. Reduce heat to low. Cook until tender, 20 min. Drain. In pot, over medium heat, melt butter. Add onion; cook until tender, 4 min. Add sugar, vinegar, mustard, caraway seeds, 1⁄2 tsp. salt and 1⁄4 tsp. pepper. Bring to a boil. Stir in cabbage mixture.
