Veggie-Rice Casserole

Convenient frozen vegetables and deli ham make it easy to toss together this hearty meal

4 oz. deli-sliced ham

1⁄3 cup chopped parsley 11⁄2 cups milk

3 eggs

3 cups cooked rice

11⁄2 cups shredded Gouda

cheese

1 Heat oven to 350°F. Coat 2-qt. baking dish with cooking spray. Chop half of ham. Slice remaining ham into 1"-wide strips.

2 Reserve 1 Tbs. parsley. In bowl, whisk together milk, eggs, 1⁄4 tsp. salt and

1⁄4 tsp. pepper. Stir in rice, 1 cup cheese, vegetables, chopped ham and remaining parsley. Transfer to baking dish. Top with remaining 1⁄ cup cheese and sliced ham.

2 Bake until set in center, 40–45 min. Sprinkle with reserved 1 Tbs. chopped parsley.
