Chicken & Corn Chowder

2 medium carrots, sliced

2 (14.75 oz.) cans creamed corn

3⁄4 cup heavy cream

11⁄4 cups unsalted chicken stock

3 cups shredded rotisserie or cooked chicken

2⁄3 cup frozen peas, thawed

2 cups cooked rice, warmed

Fresh parsley leaves (optional)

Coat large pot with cooking spray; heat over mediumhigh heat. Add carrots; cook, stirring, until starting to soften, 3 min. Reduce heat to medium. Stir in corn and cream, then broth, chicken, peas and rice; heat through, about 7 min. If desired, top with pepper and parsley.
