Mushroom-Lentil Soup

1 (10 oz.) pkg. cremini mushrooms, sliced
1⁄4 cup sliced scallions
2 medium tomatoes, seeded, diced (2 cups) 2 tsp. garlic powder
1 (1 qt.) cont. chicken bone broth
2 (15.5 oz.) cans lentils, rinsed, drained
1 (5 oz.) pkg. baby spinach, chopped
Coat large pot with cooking spray; heat over medium heat. Add mushrooms and scallions; cook, stirring, until softened, about 3 min. Stir in tomatoes and garlic powder; cook 2 min. Add broth and lentils; cook 5 min. Stir in spinach; cook until wilted, 3 min. If desired, serve with grated or shaved Parmesan cheese.
